From a huge box of apples I was given, I've cooked and canned 29 pints of unsweetened applesauce and 10 litres of apple pie filling.
There are still a few apples left, and the Scotchwoman and converted Mennonite in me are considering boiling them up for the juicing bag to make whatever litre or two of apple juice I could get out of them. Better than letting them go to waste.
So, several days worth of chopping, cooking, milling, spooning, wiping and canning has resulted in a couple of stocked pantry shelves and the filling of all my empty pint jars.
I think I'll take a walk around the yard tomorrow with a pail and have a go at rose hip jelly... Something I've always wanted to try. It's supposed to be chock-full of vitamin C, so it could be a good addition to the larder come cold and flu season this winter.
I'm calling it a day now, though. I think I've got Hillary convinced that a game of Canasta is in order.
That, and I just made a pot of tea.
Ahhh...Apple satisfaction...
Sounds wonderful. So far I have made one small batch of apple sauce (7 pints) and 1 dehydrator of apple leather. Looks like I will have to make more apple leather. The kids (all 3) are eating it up quickly.
