I did finally get that rose hip juice made into jelly, and it was quite good. It has a fairly delicate flavour; slightly reminiscent of clover honey and choke cherry syrup and summer.
The very fresh, hot off the press jar that I opened for us to try hadn't set yet, so it really did have a liquid honey consistency.
I did two batches, and for a first attempt I thought it turned out pretty well.
I think it was worth the effort.
Kinda fun to have Rose Hip Jelly in the pantry, at any rate.
I was telling Dean yesterday that you had made rose hip jelly; he had picked up a drink with ginseng/lemon/mint and rosehips. Couldn't really picture the flavor of rosehips, but your description here helped. Fun adventure for you!
